I LOVE Trader Joe’s bags of individually frozen chicken thighs. One of my favorite batch-cooking activities is to bake an entire bag of chicken thighs, and then freeze all but 2 portions. Lovely to have ready-to-thaw, easy/quick protein.
I vary the herb/spice mixtures I add to the meat, pre-cooking. Or sometimes I use only salt & pepper.
Pre-heat oven to 400 degrees Fahrenheit
Place as many frozen chicken thighs as you want to bake in a baking dish
Season, to taste
Cover with foil
Bake 20 minutes
Remove foil (I keep the same foil and re-use it for several batches, until it gets too tattered to re-use), rotate pan 180-degrees for even baking, in case your oven has hot spots. Bake another 15 minutes. At this point, cut into each thigh to see if it is done — because each portion is a different size, the cooking-durations will vary.
Once cool, I cut up and pre-portion into 4-oz servings. I usually keep 2 portions refrigerated and freeze the rest.
