I love the blog Nom Nom Paleo. I find the recipes to be very straight-forward, easy and absolutely delicious.
Her recipe for Damn Fine Chicken is no exception. I make almost no modifications, with the exception of periodically substituting a regular chopped onion or two thinly sliced leeks. I almost always add the Sunny Paris seasoning AND the rest of the ingredients.
Many times I make 2x the marinade and bake 12-15 drumsticks. Once cooked and cooled, I pick the meat off the bones and freeze in 4-oz. portions. Nice to have it on-hand for weeks when I don’t have as much time to cook.
Enjoy with roasted spaghetti squash or roasted sweet potatoes. Damn tasty!!!
