I love the blog Nom Nom Paleo. I find the recipes to be very straight-forward, easy and absolutely delicious.

For all you pork-lovers out there, RUN out and get yourself a pork shoulder so that you can make this recipe … PRONTO!  You will not be sorry!  This pork shoulder came from our amazing local farm Aberdeen Hill.  Sustainably raised, humanely treated, organic pasture-raised pork.

I usually follow Nom Nom Paleo’s recipe for Kalua Pig exactly. This week, I did not have any Hawaiian Red Salt, so I substituted Himalayan Pink Salt and liked it just fine.

What pork-lover doesn’t love pork wrapped in bacon?  🙂

Your house will smell like Kalua Pig for a day or two, but it is ABSOLUTELY worth it. Leftovers freeze and thaw beautifully.

I enjoy this with roasted sweet potatoes, boiled yukon golds or roasted spaghetti squash;  and avocado slices or a spoon full of guacamole. Mr. Batch even likes this recipe, though he usually doesn’t eat much meat!
